Pasta Carbonara





I am not here to tell you what to do...but If I were YOU put Pasta Carbonara your NEED TO MAKE LIST!

Sure,   I have had Pasta Carbonara before.  It was bland.......and stayed away from it because my family doesn't like Pasta with a cream sauce.

Well, there is NO CREAM (just raw eggs)..which means my fam will even like it less. (but what they don't know won't hurt them)

I did my research.

I came across the History of Pasta Carbonara


Also came across the MOST AWESOME FOOD PORN I HAVE EVER SEEN!! it is a 13 Minute Video, and you will want to go camping afterwards and possibly have a cigarette. 


but in the end I did it my way!

Bacon (10 slices ~thick sliced, or panchetta)
shallots
garlic
17 oz of pasta or what ever whole package you buy (not family size)
3 egg yolks, and 1 whole egg
parmesan shredded on a microplan(about more then one cup for eggs, and additional more for topping" 
salt and peppa
peas about 1 cup

slice bacon into bits.  cook, add minced shallots and garlic.   
set aside.

cook your pasta al dente..drain reserving at last one cup of pasta water. (you may not have to use the whole cup of water)

in the mean time, whisk 3 egg yolks and 1 whole with 1 cup of parmesan .Salt AND PEPPA  More Heavily on the P then the S.   when pasta is done cooking temper the eggs mixture with some of the pasta  water.  (I added about a table spoon of butter to water)


add pasta to bowl and mix all together with bacon mixture and eggs.  

this is the short version,.   I did add peas, not traditional, nor is shallots or garlic.  I like the peas for color and shallots and garlic for flavor.
