Going Green




With Tuna Salad That is.
Here is a twist on Tuna Salad the is very refreshing instead of the old gloppy mayonaise way. Now, I do not use exact measurements on things...so I will do my best to share this with you.




  • 2 cans of Albacore White Chunk Tuna in Water
  • 1 (or 2 if you are feeding a bigger crowd) of Garbanzo Beans~Chickpeas

  • 1/4 of a Purple Onion Thinly Sliced

  • A good hard Italian Cheese (Parmesan, Asiago, Fontinalla)

  • Fresh Italian Flat leaf parsley

  • Fresh Basil

  • the juice of one lemon

  • Olive oil

  • Coarse Sea Salt & Fresh Ground Pepper

  • Organic Baby Greens (a mix, or I love this with just Arugula..)

  • Avocado ~ OPTIONAL

  • 2 organic brown eggs boiled ~ OPTIONAL

Drain your tuna and place in a mixing bowl, drain and rinse your chickpeas and place in bowl. Add your thinly sliced purple onion. To taste add as much lemon juice you would like (I use a whole lemon) Drizzle with Olive oil. ( you don't want it to be drowning, but not dry either) Add a couple of chiffoned basil leafs in, and chop a few leafs of flat Italian leaf parsley in. Season to taste with salt and pepper. Mix well
Place a hand full of greens on a center of a plate.
Add tuna mixture, then shave some Italian hard cheese on top.
OPTIONAL
Serve with slices of boiled eggs and Avocado.

If you live in a small town like I do, the good thing is ALL OF THESE THINGS CAN BE FOUND AT WALLY WORLD!! During winter when you are craving some freshness, this hits the spot. During summer when it is scorching hot, this is not heavy and won't weigh you down and make you feel sluggish.

Greetings! I hope that you brought in the 2010 with a BANG! It was a great New Years.

My lil ole Suga Buga (Sophia) has turned 6!! **sigh**

And even more excitement....AMERICAN IDOL.....I did not think I was going to watch it this year, but found myself not being able to STOP WATCHING IT the first 2 nights....before you know it, it was 2 hours later and on the couch I was the whole time, quickly running during commercials for potty breaks.
Well, I will keep this short and sweet today, as I have been sitting on the computer for a few hours fixen' pics and listing my new dollies.

New Dollies! And Stage fright!











Greetings! Well it is just about that time, for the PFATT MARKETPLACE to launch. It has been a wonderful year on the Marketplace, and I want to thank everyone who has stopped by and supported the Artisans.
Well, I have 2 last offerings for the Pfatt Market Place of '09.
An Angel who can easily go from Christmas (with her Noel banner) to any other time of the year, with a flip of the banner it now says "love" (before you know it Valentines will be here)
Another creation is a very worn snow fella. he will just melt your heart, not only great for Christmas, but through out the Winter season.
Tomorrow is a big day, the Christmas Play will Be held at school and Gabby has 3 performances to do. We will spend tonight going over the lines and Singing to "SANTA'S HOLIDAY HOEDOWN.
You see Santa's toy shop is going under because of an unexpected recession. They have refinanced and tried everything else they can think of, but have finally run out of ideas. All are very worried. Suddenly the idea comes up that they should go to Branson, Missouri, open up a theater and put on a show. They hope to make a lot of money and save the toy shop and subsequently Christmas itself. All seems to be going fine except they are short a main headliner for the show that will guarantee their success. Santa Claus is the logical choice but his reluctant to take up a country career. In the end, it is Mrs. Claus (gabby) considerable powers of persuasion that convince Santa that he has no choice but to swallow his insecurities and "go with the show?" To no ones' surprise he eventually sees the light and saves the day.

I am no Jackie-O



HMPHHHH...

Well, I am not Jackie O,
Nope,

I have no Grace.

None I Tell ya..

This is the 2nd Halloween in the past 6 years that I have spent with a broken/sprained foot.


About 6 years ago I broke my foot pretty bad, just by jumping up and down when the Cardinals (baseball team) beat Arizona..(it could have been 7 years ago..)


Whelp, 2 days ago, by just simply walking down the steps, I slipped on a wet leaf...my ankle went under me, and I laid on the front side walk yelling for help!! (I felt like the lady in the commercials..Help, I have falling and I can't get up!!)


The neighbor ran out and assisted me inside my house. In the recliner I sat till hubby got home from work.


on another note..I CAN NOT CARVE PUMPKINS!! **sigh** I mean I try, I really do...

the other night I did give my best.


You know the books you buy..it comes with all of the tools and templates.

I followed instructions. transferred the pattern using the tool provided.

Did the eyes, the nose..then started to go around for the face, before I knew it, I cut out a perfect circle out of my pumpkin..and made a mask basically..(I was doing the skeleton pattern, the one marked the EASIEST!!)


GRRR..


to fix it..

just got a smaller pumpkin, did a very simple naive face and VIOLA!

ZING ZANG ZOOM ~The Greatest Show On Earth









Greetings!
Wow, what a fast busy couple of weeks. I was busy with orders (Thank you customers!) and still busy with an order. I did my first "show" so to say, it was a home show in Missouri in a small town of Labadie. There is so much Charm in That town!
But first..
Ladies and Gentleman boys and girls Children of all ages...
ZING ZANG ZOOM
THE GREATEST SHOW ON EARTH!!

This past weekend My mom took me and the kiddos to the CIRCUS!! We had great seats too, it was a blast to see the amazement of Sophia's face..she was in awe. I was too! It has been years since I had been to the circus, and it seem to me last time it fell really FLAT..
But this was just a Circus with non stop action and 3 rings!

These Chinese acrobats were amazing!





The tight rope walkers sure did walk a fine line! (**chuckle** again, no pun intended)







Gabby's fav part is when Mr. Gravity (the bad clown) was captured

My Favorite part was the ELEPHANTS!!



Shortly after the tigers were doing there show.












But going back to my weekend in Labadie..

There was a great deli that went to many times, The sandwiches were great and the soft serve was better then Ted Drews!
(a frozen custard joint on historical route 66 in St. Louis)





While sitting around at the Labadie Deli, a lady drove up with her dog.

We Watched Buddy while Sandy got Sandwiches to take home.

Lastly, We bought some farm fresh eggs, inquired about a suckling for a Spring Meal and supported local growers.






It was a great weekend in the country!! The week after we came down with the dreaded flu and Sophia and I had respiratory infections, but on the mend and the circus help put a smile on our face.



Considering I took nearly 800 pictures in the past 2 weekends, I think I narrowed it down nicely ;)
